My sweet tooth strikes again!  I was craving some delectable chocolate-y goodness, so I decided to create some healthy brownies.  They have 13 grams of carbohydrates, of which a whopping 8 grams is fiber!

Wet Ingredients
  1. 2 large eggs
  2. 1 tbsp butter, melted [Kerrygold Irish Butter]
  3. 1 cup water
  4. 2 tbsp fitness fiber
  5. 1 tsp vanilla extract
  6. 1 tsp maple extract
  7. 10 packets Splenda
  8. 8 drops liquid Stevia
Dry Ingredients
  1. 1/2 cup coconut flour
  2. 1/2 cup cocoa powder [Hershey's Special Dark]
  3. 1 1/2 tsp baking soda
  4. 1 tsp salt
Final ingredient
  1. 1 large zucchini, shredded
Instructions
  1. Pre-heat oven to 350° F.
  2. Grease 8" square casserole dish.
  3. Blend wet ingredients with mixer on low setting.
  4. In separate bowl, mix together dry ingredients.
  5. Combine wet and dry ingredients.
  6. Fold in shredded zucchini.
  7. Bake for 50 minutes.
