My father makes the most delicious chocolate chip cookies I’ve ever had… unfortunately, he follows the recipe on the back of the Nestle chocolate chip morsel bag, with margarine and eeerything.  Yay for trans fats!  Since I obviously can’t indulge in those life-shortening delicacies but once every year, I decided to try and create a healthier alternative.  One that I could eat daily!  This recipe is still a work in progress, but as of now this is the recipe…

Ingredients
  1. 2/3 cup egg whites
  2. 1/5 cup coconut flour
  3. 1 tbsp hemp flour
  4. 1 scoop vanilla casein
  5. 1 tsp vanilla extract
  6. 1 tsp maple extract
  7. 10 packets Splenda
  8. 8 drops liquid stevia
  9. 2 squares Dove Dark Chocolate
Instructions
  1. Preheat oven to 350° F.
  2. Mix all liquid ingredients - egg whites, extracts, and stevia - with Splenda.
  3. Once mixture gains some volume, mix in casein powder and hemp flour.
  4. Slowly mix in coconut flour.
  5. Break Dove dark chocolate pieces into tiny morsels; mix into batter.
  6. Spray baking sheet with cooking spray.
  7. Scoop batter onto baking sheet; bake for 15 minutes.
